PASTE TOMATOES
Paste tomatoes are generally plum or heart shaped. Most tomatoes in this category are very meaty and not quite as moist as cherries, globes, and beefsteaks, resulting in thick sauces and salsas whether fresh or canned:
Amish Paste Tomato - RED
Oxheart or plump plum, 3" x 3½", 5-12 oz. Cherry to red-orange to deep red. Sweet, outstanding flavor, with good balance of sweetness and acidity. Firm, meaty, juicy. Great for anything, especially sauce. Indeterminate, droopy leaf (this is normal...don't over-water in response!), good yield. Mid-season to late crop. Heirloom from the Amish of Wisconsin. RAFT Red List (threatened), US Ark of Taste. First offered by Aravaipa Heirlooms in 2010.
Lapetina Tomato - RED
Oval, medium sized. Red. Semi-determinate, initial crop will ripen at approximately the same time. Regular leaf, prolific. Mid-season crop (80 days). Heirloom from Mexico. Extremely rare. First offered by Aravaipa Heirlooms in 2011.
Orange Oxheart - ORANGE
Large oxheart to round, 12 oz. to a pound. Deep orange skin and orange flesh. Meaty with few seeds. Fragrant and flavorful. Indeterminate, regular leaf. A family heirloom from the Virginias. First offered by Aravaipa Heirlooms in 2010.
Orange Roma - ORANGE
2"-3" long plum-shaped fruits. Salmon to orange in color. Meaty with very few seeds. First offered by Aravaipa Heirlooms in 2012.
Powers Heirloom - YELLOW
Oxheart or plum, 3-5 oz. Pale yellow. Fruity. Juicy. Paste tomato. Indeterminate. Heavy yields. Late crop. Heirloom. Raft Red List (threatened). First offered by Aravaipa Heirlooms in 2010.
